Recipe Roundup: 5 Soups to Warm You

Here in Chicago, we’ve had an extension of summer weather with very mild temperatures taking us well into November. Until today, that is. With heavy rainfall and temperatures starting to dip, we’ve had our first prediction of snow coming this weekend. Although I’m sure it will amount to nothing more than freezing rain, the sound of it conjures up thoughts of comforting soups and stews that warm us on a cold damp night.

Even as I write this, I’m preparing a delicious pork and sweet potato stew from BHG. So here I am to share my findings with you. Feeling like a little pumpkin cheesecake this weekend? Simply whip up one of these delectable desserts!

Creamy Chicken Mushroom Soup – My fall go-to soup this year was chicken noodle. While it was the perfect transition from summer to fall, I’m really liking this winter comforting version of creamy chicken soup, heavy on the mushrooms and other veggies.

Asiago Bisque – If you are a fan of cheese (I personally couldn’t live without!), and if you’re particularly fond of the sharp potent flavor of Asiago, then this comforting cheese bisque is for you! Admittedly it’s not low-cal, but after a day of skiing, snow shoveling, or otherwise appetite producing activity, this will warm you up in the most flavorful way!

Vegan Creamy Roasted Tomato Soup – If you’re ambitious enough to roast your own tomatoes, onions and garlic, and you have the time, this is both healthy and comforting. Add crusty bread for dipping into this delicious tomato soup, and it’s divine.

Italian Wedding Soup – Okay, this is one of my favorite ways to get spinach into my diet – especially on a cold winter night. Take the time to make the mini meatballs as that is the time consuming part. But the flavor and the mini-ness is the best part!

Zuppa Toscana – If you’re a fan of Olive Garden’s Zuppa Toscana, you must make this one! Along with creamy, savory flavor, the best part about this recipe is it cooks in the crock pot! Love that for giving me some time back!
