Recipe Roundup: Grown-up Grilled Cheese

April is National Grilled Cheese Month, and nothing feels as comforting as a grilled cheese sandwich. It takes me back to the comforts of childhood so much that I can still smell it on my mom’s stove cooking. Funny thing is, I haven’t had a traditional grilled cheese like my mom used to make it in forever. Back then it was Kraft American cheese on buttered white bread, often served on the side of a hot bowl of Campbell’s tomato soup.
As comforting as that memory is, these days I’m likely to use whole wheat or rye bread with sharp cheddar, Swiss or some combination of varietal cheeses. The grilled cheese sandwich has come a long way including a variety of toppings to be added. This little roundup of grown-up grilled cheese will make your mouth water.
